Vegan and Vegetarian Meal Prep

Preparing meals for the week only takes a few hours and can make life so much easier. Eating clean can seem difficult when the work days are busy and long, but being prepared helps us stay on track. Here is an example of a meal prep that my husband and I made within 3 hours. Breakfast was overnight oats (not pictured), lunch included a veggie soup cooked overnight in the crockpot, along with some other snacks like trail mix, granola bars, and/or fresh fruit.

We bring our food to work during the week, its so much cleaner and cheaper that way. We brought soup in a lunch pail with our snacks and our dinners were portioned out.

The first dinner box has brown rice, black beans and potatoes for a burrito bowl, pictured below. The other box has seitan sausage, baked sweet potato, black beans and green peas. Clean, simple, packed with nutritional value.

Once we were ready for dinner, the burrito bowl was heated and placed on a bed of lettuce, topped with salsa and avocado and a quesadilla on the side for my husband who sometimes eats cheese. My seitan bowl also had half an avocado on top when I prepared it for dinner. Super delicious.
